CHEF
ESS, a division of Compass Group LS requires a CHEF at Letseng Diamond Mine in Mokhotlong. Under the guidance of the line manager, the ideal person will be responsible for the service and to provide great quality food service and support services as required.
Duties & Responsibilities:
• Taking reasonable care for own health and safety and that of others.
• Co-operating with line manager on HSE matters.

MAIN DUTIES
• To prepare meals, snacks and functions correctly and timeously.
• To supervise (cooks and FSAS) subordinate staff members.
• To ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
• To ensure that foodstuffs are used correctly so that wastage is kept to a minimum.
• To ensure that food in the bain-maries look attractive, re-garnishing when necessary or needs replenishing.
• To ensure that all stock requirements for the following day are available and in good condition.
• To ensure all maintenance problems are reported to Management and followed up.
• To ensure the preparation of food is hygienic and that a “clean as you go” discipline is adhered to.
• To promote team leadership and lead by example.
• To promote a good image to our clients.
• To maintain a high standard of personal hygiene and correct dress procedure as laid down by Management and our clients.
• To help with regular stock-takes as and when required.
• To attend training courses as and when required.
• Included in these duties, you are required to perform any other reasonable tasks required by your Manager.
Minimum Skills Requirements:
• Min COSC plus Diploma in Hospitality Management / Equivalent.
• 5 years experience as a Chef within the mining /catering / hospitality background.
• OR 7 years experience as cook
• Excellent communication skills required, good writing skills and business etiquette.
• Must be computer literate (Ms Word/ Excel).

Information Technology Manager
