The above vacancy exists at MGC Properties – Mpilo Boutique Hotel (Maseru). Applications are invited from
suitable candidates for the above position.
KEY RESPONSIBILITIES:
• To direct the preparation of all meals in the hotel
• Manage the kitchen employees and offer culinary instructions
• Supervising and coordinating culinary activities
• Making estimations of food consumptions in order to make an informed decisions on food purchases and
requisitions
• Developing and selecting the recipes to be used in the hotel
• Standardising the production of recipes in order to ensure customer service quality at all times
• Establish techniques of food presentation and food quality standards
• Food cost control, management of market list, planning and pricing the menus
• Ensure that all kitchen equipment works and is maintained properly
• Ensure that the kitchen is always safe and sanitary
• Decide and control of food portions to be served
• Training, supervision work roaster and management of kitchen staff
KEY REQUIREMENTS
• Culinary Diploma/ Degree from a reputable international cooking school
• Minimum of 5 years as Executive Chef/Executive Sous Chef
• International experience as Executive Chef in a 4 or 5 star business/boutique hotel
• Fine Dining, a la carte, buffet and conferencing experience
• Menu planning and food costing experience
• Knowledgeable with latest international cooking trends
• Excellent command of English Language (reading, writing and spoken)
• Good Computer skills with sufficient knowledge of Microsoft Word, Excel, Power Point, email and internet
• Good trainer
